What size whole alligator do I need?Updated 2 months ago

Use the below information to determine what size whole skinned gator you want. 

  • Meat will come from the tail, legs, tenderloin, and the ribs
  • Line of fat encases the tenderloin; typically, is trim cut after cooked
  • Tail meat is going to be the most tender
  • 40% of usable meat 
  • Multiply the alligator weight by 40% to get the amount of usable meat.     Ex: 30lb x 40% = 12 lbs. of meat.                                                                           Yields 24 - 8oz meal sized servings or 48- 4oz appetizer sized servings
